Today I completed my tiny, little round of radiation because I only had five treatments and most people have like, 30!
While at the Tom Baker Cancer Centre, I had a cool talk with one of the radiation nurses because her daughter has Rheumatoid arthritis just like Posie. We were discussing how acupuncture has helped me, her daughter and Posie with pain. It's interesting how you don't know what resources you may want until you're in need them.Seeing as I missed Recipe Thursday yesterday because I went for buffet lunch with both my parents... today, I present to you:
Cancer Melting Vegetable Soup (serves 6-8)
- 1 tbsp olive oil
- 8 cloves of minced garlic
- 2 chopped onions (one red and one white)
- 1 cup chopped green cabbage
- 1 tsp each of pepper, oregano and salt
- 1 chopped orange pepper
- 2 diced carrots
- 1 cup each of shredded basil and hand shredded arugula (just rip it apart)
- 2 handfuls of cherry tomatoes
- 1/2 cup quinoa (any colour)
- 1 carton of vegetable broth
Super simple, start by grabbing a medium/large pot, heat oil on high for 20 seconds then add in your onions and garlic. Then throw your spices over top and simmer on medium for 3 minutes. Once it smells good, add your peppers, cabbage and carrots. Simmer for 2 more minutes and then add stock until it covers all of the veggies. Puree the stock gently, using an immersion blender if you've got one but you can always skip this step if you prefer a chunkier soup. Now add tomatoes and quinoa and simmer on med/low for 20 minutes. Once your ready to serve throw in your greens and stir around. Now prepare to eat four of the main cancer eliminating foods according to Dr. David Servan-Schreiber: garlic, cabbage, onions and leafy greens!
